Everyone’s daily food menu grows stale from time to time and they need some creative ideas for tasty new meals. Baked Grapefruit
4 grapefruit halves
2 Tbsp. melted butter
2 Tbsp. honey
Use pink or red grapefruits for a sweet Valentine’s Day breakfast treat. Preheat oven to 450°F. Use a grapefruit knife to loosen the grapefruit sections. Place on a baking pan and brush the melted butter over the cut sections. Drizzle the honey over the cut sections. Bake uncovered for about 15 minutes. Serve warm.
Boursin Omelet
8 eggs
2 tbsp. water
Salt & pepper to taste
1 tbsp. Olive Oil (not virgin, light will do)
1 tbsp. Butter
3 oz. Boursin cheese
1 tbsp. chopped scallions
Whisk the eggs, water, salt, and pepper in a bowl. Heat the oil in a round, medium-sized frying pan on medium heat and add the egg mixture, then turn up the heat to medium-high. When the omelet is set, crumble the cheese on top. Then fold the omelet over and remove it from the pan to the serving dish. Sprinkle with scallions. Serve with toasted bagels and the rest of the Boursin.
