Some of us had hoped that milder temperatures would now be the norm at Smith Mountain Lake for the rest of the summer. But this week the thermometer and the humidity have begun to climb again. When it is hot very few people like slaving over a hot stove. So here are some ideas to make these last few weeks of summer a more simple and more pleasant experience with preparing meals. A couple of Hot Weather Recipes to Enjoy at SML this summer…
Spicy Coleslaw
- 1/2 head of shredded cabbage
- 2 carrots, peeled and diced
- 1 oz. chopped cilantro
- 1 tsp. minced garlic
- 1/2 cup raw sunflower seeds, whole or chopped.
- Dressing – Juice of 1/2 lemon, 2 tbsp. apple cider vinegar, 1/4 cup olive oil, 1tbsp. honey, 1/2 tsp. sea salt, 2 tbsp dukes mayonnaise (optional)
Chicken Salad Sandwich
- 1 large diced zucchini
- 2 teaspoons sea salt
- 2 Tbsp olive oil
- 15 ounces of whole-milk ricotta cheese
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon grated lemon peel
- 4 pieces of favorite sandwich bread
- 2 large sliced tomatoes
- 3 baked chicken breasts sliced thin
In a large skillet heat olive oil on low. Add zucchini and salt and sauté 2 minutes. Put the mix into a large bowl. Add ricotta, Parmesan, and lemon peel to the zucchini. Stir and season to taste with salt and pepper. Put tomato slices, chicken slices, and mixture on the bread, and enjoy!
